slice zucchini crosswise (~1cm width), toss in some oil, sprinkle with salt and pepper, bake at 220C until slightly browned and then tell me it's not tasty

You just halve the zucchinis and spoon them out and chop the flesh in small pieces, mix it with whatever you want and put it back in (or leave the zucchini flesh out if you want more room for other stuff), cheese on top heavily recommended though. The only problem I encountered was that is was quite watery, didn't affect the taste badly but still bugged me a little, I guess it mostly came from the mushrooms cooking under the cheese in the oven
 
There are different zucchinis, some taste bitter and some taste sweet and the skin isn't really that tough...

yeah, mushrooms release a lot of water, you should probably cook them separately beforehand

I also used a shit load of mushrooms like 300g, 100g would probably have been enough for 4 halves

I am not sure tbh lol, I ate the tastiest aromatic zucchinis and I ate some horribly bitter ones that almost ruined the entire dish, I think it has something to do with age. The fresher the zucchini the sweeter they are, they tend to get bitter somewhat quickly despite not being bad. Also the small zucchinis are sweeter than the big ones, but obviously they are not that suitable for filling. Just make sure you eat them 3-4 days after buying

the zuchini is not aborbent like bread. if it was on bread it would be much more appetizing. its sort of slimy zucchini
