idk, here it seems that the more urban/wecternised ppl you talk to, the weirder looks they give you if you eat tripe. But it's pretty common when you're in the countryside, tripe stew ("po tržaško" - trieste style, with onions, garlic, tomato, bacon) is not available everywhere but you see it commonly at inns.
I once ordered it in Italy (Dolomites) and the restaurant head looked really happy that someone ordered that. He personally brought it to my table. So I figure it's one of those foods that were once common but as we got wecternised american influence forced us to stop eating it and it's considered a country bumpkin thing to do.

I've had some terrible tripe, it can smell bad, it can be hard and chewy, but it's good when done right.
I'd ask for some Asian recipes for making it but I reckon you don't know any xD Maybe I'd have more luck trying to order it at Chinese restaurant here, hoping that it's one of those legendary hidden menu items.
