it started with the government buying excess milk to bail out farmers and turning it into cheese (processed cheese product)
 
it was huge in the 80s when they'd hand out blocks of it to poors and most people who ate it spoke highly of it. apparently it melted nicely and made really good grilled cheese sandwiches

food stamps are now just a debit card that you can use at the grocery store with some restrictions
 
unfortunately gumbin cheese isn't available for purchase, I think the closest you can find that's commercially available is Velveeta

I've had government cheese. Some years ago I was living in a homeless shelter and I worked in the kitchen where government cheese was served.
It's uninteresting but not bad, very mild, not as soft as velveeta, but like velveeta, it's probably what is known as "process cheese" so it melts well.
