If I use tap water to make sencha green tea, the difference is so noticeable. The water is less clear, the taste is different. Very strange. Tap water here seems very mineralized.

Ok apparently Germany is indeed still a Nazi state, it is EU drinking water directive, they do it in France and Switzerland and other countries. But I remember doing it 10 years ago, maybe they changed something about it or probably most restaurants will do it as long as you order something else as well
