That's why you add lentils to curry and beans to other things. Also chickpeas.
There are cerain proteins that are difficult to get from vegetables but you can compensate with eggs and dairy. My protein intake increased after going vegetarian.
I had a mushroom ramen last year, a real one served in a bucket of noodle soup, it was great ans apparently that restaurant isn't even real japanese.
Didn't used to enjoy mushrooms but now I make them into padding for anything with a sauce
